Wow, vet visits are expensive! Over the past two days we spent about $500 on this sick kitty. He has 4 different medicines he needs to take and is on a bland food diet (special iams food blend). We are really concerned about Butters and hope he gets better soon.

Cold Ginger Chicken

On Sunday I made Cold Ginger Chicken for the very first time. This is a dish that my family would order all the time from the Chinese restaurants in Hawaii. I had been craving it so i looked up the recipe online and then made my own modifications. The recipe usually uses a whole chicken, but i wanted to use just chicken breasts. Here is how i made it:

COLD GINGER CHICKEN
3 boneless, skinless chicken breasts
1 T chicken bouillon
1 quart of water
2 slices fresh ginger, peeled
2 cloves garlic, sliced

In a pot, boil the chicken stock along with the other ingredients listed above. Add the chicken and boil until cooked through. Remove chicken from broth (I reserve the broth and make soup with it later), place in a dish and transfer to fridge to cool. You may cut the chicken into slices or chunks if you prefer.

For the ginger sauce combine the following ingredients in a food processor:

1/2 c fresh ginger, peeled, cut into chunks
3 stalks green onion, chopped
2 cloves fresh, peeled garlic
1/2 c extra virgin olive oil
1 T rice vinegar
1/2 T brown sugar

Transfer sauce to container and refrigerate.

When ready to serve, you can either put the ginger sauce on top of the chicken or let everyone put their own sauce on it since it can be potent.

Jeff said he liked it but that the sauce was a little too strong. We ate it for dinner on Sunday night along side an Oriental Salad. Later in the week i made chicken vegetable soup with the leftover broth, and then since we still had leftovers i ended up bringing the Cold Ginger Chicken to work for lunch 2 days in a row. But it was yummy! I ate it with whole wheat tortillas.

On my morning drive to work, i was sitting at a stop light, drinking some Vitamin Water 10, when all of a sudden i hear wheels screeching and then feel my car lurch forward and water go all over my clothes, all over my face (up my nose on my glasses), and all over my car! I sit there in a shock from my surprise mini-bath and think “Oh, Sh*t”. I pull off to the side of the road and see this truck with a trailer attached behind me…great. I get out of the car and assess the damage, and luckily my bumper still looks like a bumper and there are only two small vertical indentations from where his license plate slammed into my car. The guy was apologetic and said he was looking down for a phone number and didn’t stop in time. He offered his information but i said i didn’t need it. My car now has more character! Yah! I think i was actually more shocked because i got drenched with vitamin water. The lines are barely visible unless you go up really close to it and look at a certain angle.

Butters had major pooping issues today so Jeff took him into the vet to see what is up. The doctor took a stool sample and told us to give him a few medicines and feed him a special diet until they determine what is making him sick. They also gave him a pain medication which made him a little stoned almost. Can you tell in this photo? Looks like he saw a ghost.

Patti gave me this scarf back in January when she was cleaning out her closet to prepare for her move down to San Diego. I don’t think i wore it until today, but it matched my outfit perfectly! This whole week i have been FREEZING at work.. despite the swimsuit weather we had this weekend. Long pants, shoes, sweaters….ugh, what a bummer. Hope it warms back up soon.

Food Club – Finger Foods

Carrie invited me to her Church’s Food Club which usually meets every second Tuesday of the month. This month’s theme was finger foods, so I did something I know i can make which is Sushi! The other foods where Cheesy Bread, Stuffed Mushrooms, and Potato Croquettes. I’ve always wanted to be a part of a cooking club, so i’m glad Carrie invited me. Next month’s theme is fruit!

Whenever we prepare dinner Butters usually goes all crazy and constantly meows and begs for us to give him some (human) food. He will sit right behind you as you are working, so when you step backwards you’ll end up stepping on him or his tail. So to make it easier sometimes i let him go play in the garage to get him out of my space. Well tonight i did that, and when i went back out to grab some water, I noticed he was chillin’ on top of my car.

This weekend has been beautiful – upper 80s possibly even in the 90s. Hot, but not TOO hot. Did some yard work in our little patio area – mostly pulled out weeds and replanted some green onions. I tried to take advantage of the weather and get a little color in my skin… it felt so nice to have the sun on my body!

Children’s Miracle Network 5k

Childrens Miracle Network Charity Run

Salinas Valley Memorial Hospital’s puts on an annual charity run to benefit Children’s Miracle Network. Carrie reminded me a couple weeks ago that it was coming up and I decided to sign up since 1) its in Salinas — easy; and 2) I did this run in 2006 as my first ever 5k and thought it’d be the perfect one to choose to do it again 3 years later! I haven’t been running at all, so i set my goal for this year to finish earlier than my previous time of 35:23. Today I ended up with a running the 5k in 29:58. Woo hoo! I placed 4th in my age division (25-29) which was just out of reach for getting a medal. My 2006 run I actually placed 3rd and got a bronze medal! But medals really don’t mean much to me — i was most impressed with my short running time. So much so that I want to see if i can 1up myself and am already signed up for another 5k on June 6th!
